Belgian Wit

Our wit beer is authentic with 25% Rahr white wheat and Carapils in the malt bill, and some rolled oats add body to the mouthfeel. Witbier is very pale and cloudy in appearance; ours is spiced with lightly toasted organic coriander and Cara Cara orange peel from Lake County’s Montevista Farms. This beer is the definition of crisp, as it warms you will notice more floral aromas. Perfect white head with hop bitterness from Nugget and Czech Saaz in the distance.

Calisphere
California Common

Brewed with lager yeast at ale fermentation temperatures, Calisphere has a noticeable toasted malt flavor derived from the inclusion of Patagonia Munich malt in addition to its base Rahr Pale. Using Northern Brewer, and a little Ekuanot give our version of ‘steam’ beer a modern fruitiness in addition to that lovely familiar hop profile. Deep gold and amber in color, this refreshing ale has a thick, rich creamy head that sticks around for awhile.

Alchemical Haze
India Pale Ale

A balanced, soft, and juicy New England-Style Hazy IPA made with Galaxy, Vic Secret, and Ella, the hop aromas are all over the map, but stick close to the equator. Tropical fruit, candy, bubblegum, mango, pink grapefruit, it is so good. She pours a deep persimmon with fluffy ecru foam. Subtle, almost nonexistent bitterness and minimal crystal malt keeps the finish tight. You just can’t stop drinking it.

Rubirosa
Porter

Dark, handsome, and diplomatic like Porfirio himself, this porter uses Patagonia Perla Negra to impart a mellow chocolate, nutty flavor and takes it easy on the coffee and toasty notes. Styrian Golding and Challenger are the perfect hops to fuse with the darkness.

Contigo
Mexican Lager

Contigo, means ‘with you’ in Espanol, is our take on an authentic Vienna Lager as brewed in Mexico in the late 1800s. The malt bill is a blend of Weyermann Pilsner, heirloom Vienna, and Epiphany North Carolina grown Munich. A touch of flaked maize dries the beer slightly to maintain crushability.  German Hersbrucker and Tettnanger hops add a hint of candied citrus aroma with a very slight spicy bitterness at the finish.

ATMOS Flat
Amber Ale

You have been deceived. Earth is a flat disc ringed by sea ice, NASA is controlled by round-Earth Freemasons, and Elon Musk makes fake rockets from blimps. No such thing as an atmosphere. This is the beer for the enlightened ones.  Mecca Grade Pelton malt imparts a complex, slightly grassy flavor, and adding a touch of Shaniko white winter wheat takes it into super rich, creamy cloud of flavor territory. Naturally light to nonexistent carbonation, this beer is F-L-A-T intentionally, really, just like the earth.  Poperinge and Saaz hops set a hop balance to the Cumberland Island honey from our friend the Hive Pirate.

Veruca
Gose

This highly-carbonated, tart and fruity wheat ale with a hint of caraway and fennel is a salty refreshing summertime beer. We use a mix of Himalayan pink sea salt and as much Cumberland Sound sea salt as we can make in time to brew the next batch. Mouthwatering, Effervescent and medium bodied from the wheat.  Best consumed in direct sunlight, very bright requiring shades. Also known as Siberian pineapple, the sea buckthorn imparts sour apple and sour orange alongside fresh raspberry.
